Skupina 2 LEA (late embryogenesis abundant) [http://wiki.fkkt.uni-lj.si/index.php/Aminokisline_in_proteini proteini], imenovani tudi dehidrini, naj bi stabilizirali makromolekule in jih zaščitili pred poškodbami zmrzali, dehidracije in ionskega ter osmotskega šoka. Njihova natančna funkcija je še nepoznana. &lt;br /&gt;
So močno hidrofilni in temperaturno stabilni proteini. Pospešeno se pričnejo sintetizirati po indukciji določenih genov, kar je posledica odgovora na mraz pri rastlinah, ki so nanj prilagojene.&lt;br /&gt;
Domneva se, da dehidrini stabilizirajo membrano preko direktne interakcije z membransko površino ali pa indirektno z močno interakcijo z okoliško vodo. Dehidrini nastajajo tudi kot odgovor na dehidracijo rastline.&lt;br /&gt;
&lt;br /&gt;
Preučili so primer pšeničnega dehidrina (DHN-5), njegovo aktivnost in termično obstojnost na dveh različnih encimih, beta-glukozidaze (bglG) in glukozno oksidazo/peroksidazo (GOD/POD) in vitro. Prečiščen DHN-5 protein je uspel zaščititi in stabilizirati aktivnost bglG encima, ki je bil izpostavljen višjim temperaturam. DHN-5 je uspel stablilizirati oksidacijske encime, saj je izboljšalj zanesljvost pri meritvah glukozne koncentracije z glukozno oksidazo/peroksidazo, med tem ko se je temperatura povišala iz 37 na 70 °C. To dokazuje da je dehidrin DHN-5 sposoben ohraniti encimske aktivnosti in vitro pri zaviralnih pogojih zaradi segrevanja.&lt;br /&gt;
&lt;br /&gt;
Nekaterim dehidrininom so dokazali da varujejo laktat hidrogenazo (LDH) pred poškodbami zamrzovanja in odtalitve. &lt;br /&gt;
Njihova struktura ima manjšo nagnjenost k alfa vijačnicam, so zelo prožni, fi segmenti v dehidrinih pa naj bi ohranjali neurejeno strukturo, zaradi česa delujejo kot molekularni ščiti, kar preprečuje delno denaturiranim proteinom da bi reagirali med sabo.&lt;br /&gt;
