Aminokisline (AK) so zidaki beljakovin in jih organizem nujno potrebuje za rast ter razvoj. Različne beljakovine so sestavljene iz različnih AK v različnem zaporedju in v različnem številu. Nekatere AK sintetizirajo mikroorganizmi v prebavnem traktu živali ali se sintetizirajo iz drugih AK, druge pa morajo živali pridobiti s prehrano; te imenujemo esencialne AK.
