Ovalbumin je [[fosfoprotein]] sestavljen iz 386 aminokislin z eno N-vezano oligosaharidno verigo. Ima kristalno (tridimenzionalno) strukturo in ga uvrščamo med [[serapin]]e, ki vkjučujejo tudi kjučne zaviralce serinske proteaze človeške plazme, kot tudi nezavirajoče homologe, kot so globulin in angiotenzinogen. Funkcija ovalbuminov je neznana, sicer se domneva da so biološke rezerve kovinskih ionov in aminokislin, ki jih uporabljajo organizmi in se nahajajo v jajčnem beljaku, mleku in semenih rastlin.&lt;br /&gt;
