Transglutaminaza je klasificirana kot EC 2.3.2.13. Vezi, ki jih transglutaminaza tvori, kažejo večjo odpornost na proteolitsko razgradnjo (proteoliza).&lt;br /&gt;
Transglutaminaze tvorijo obsežne premrežene, večinoma netopne proteinske polimere. Ti biološki polimeri so nepogrešljivi pri tvorbi pregrad in stabilnih struktur v organizmih (npr.: krvni strdki, lasje, koža).&lt;br /&gt;
&lt;br /&gt;
Katalitska reakcija je v splošnem ireverzibilna in mora biti strogo nadzorovana.&lt;br /&gt;
&lt;br /&gt;
Pomanjkanje faktorja XIII (transglutaminaza), ki je redka genetska napaka, povzroči motnjo strjevanja krvi. Takim bolnikom je treba ta faktor dodajati, da lahko kaskada strjevanja krvi steče.&lt;br /&gt;
&lt;br /&gt;
Protitelesa proti transglutaminazi so bila najdena pri pacientih s celiakijo, zato obstaja verjetnost, da igrajo pri tej bolezni pomembno vlogo.&lt;br /&gt;

V komercialni prehrambeni industriji se transglutaminaza uporablja pri povezovanju proteinov. Primeri takšne uporabe so priprava jedi, kot so imitacija rakovega mesa in ribje kroglice.&lt;br /&gt;
