Albumini

Albumini so skupina globularnih (kroglastih), največkrat nevtralnih ali rahlo bazičnih proteinov, ki so topni v vodi. Spadajo med enostavne oz. prave proteine, ki za razliko od sestavljenih ne vsebujejo neproteinskega dela. Največkrat se pojavljajo skupaj z globulini.
